The evening begins with sweet potato johnny cakes, served with stewed liver. Back then, no one bought liver from a butcher. Families raised their own animals—sheep, goats, and pigs—so meat came straight from their land. Sweet potatoes, herbs, and vegetables were homegrown too, making every meal fresh and full of flavor.
Next comes Cookup, once known as pilau, a hearty mix of rice, lentils, saltfish, and chicken, served with a simple salad. This was everyday food, made from what was available. Nothing went to waste, and meals were built around what people could grow or raise themselves.
Dessert is a slice of coconut cake with ice cream, a sweet finish to an evening filled with memories. As guests eat, the host shares stories of how Nevisians once lived—when johnny cakes were a staple at both breakfast and dinner, always paired with a rich stew.
